The Fearless FODMAP Life
About two years ago I first heard of the term "IBS" and that my frequent runs to the bathroom might be more than just the bad end of a spicy burrito. Between the unstructured life of a student and the limited healthcare and even more limited money, I was only able to receive an actual diagnosis and care a few months ago. Among lots of tests and trying different medications, the low FODMAP diet was also recommended to me. This is a log of my trials of living the low FODMAP life fearlessly!
Why fearlessly you might be wondering? Well, firstly this diet almost demands that you must cook your food for every meal and I am far from an excellent chef. I don't even know if I could say I'm an ok cook! And look at the foods out of the question: apples (I just came back from a weekend apple picking trips and those big red beauties are smiling at me), pistachios (I literally have a jar of these in my office and grab a handful every so often) and most of all wheat! The tooth fairy got a sugar high from collecting my teeth as a child, that's how serious my sweet tooth is. I would really enjoy coming up with some good recipes for brownies, cookies and muffins - the absolute cornerstones of my diet.
